Immich: unpin release; use fetch & deploy function for update

✍️ Description

• unpins the version in immich-install.sh to use latest version (v1.135.3)
• uses the fetch_and_deploy_gh_release function to handle updates
  • does not fix the argument parsing issue mentioned in Discussion (Immich v1.135.0 - POTENTIAL BREAKING CHANGE #5264)
